Sherry Chicken with Vegetables

INGREDIENTS

2 Chicken breasts; sliced at an angle against grain
3 tb Sherry
1 ts Corn starch
Salt; to taste
20 Snow peas
1 cn Bamboo shoots; sliced
8 lg Black mushrooms; sliced thick
1 cn Water chestnuts; sliced
2 Stalks green onions; sliced in 2 inch pieces
3 Cloves garlic; cut in two or three
Vegetable oil

INSTRUCTIONS

Mix chicken meat with sherry, corn starch and salt, set aside. Heat two
tbsp oil in frying pan. Toss in garlic and onions and stir fry for thirty
seconds. Add chicken and stir fry until just done. Remove from pan. Heat
two more tbsp oil in frying pan and add snow peas and stir fry until almost
bright green. Add other vegetables and meat. Stir fry until meat is done.
Notes Sometimes my mother has added sliced carrots or other vegetables to
this recipe. I usually use what is on hand.
