Shrimp-Apple Salad

Eggs Salad 6 Servings

INGREDIENTS

1 1/2 lb Frozen shrimp; cooked and diced
1 c Diced celery
2 c Diced apples
1/4 c Freshly squeezed lemon juice
2 tb Salad oil
1 ts Salt
3 Hard-cooked eggs; coarsely chopped
1/4 c Mayonnaise or salad dressing
Lettuce cups

INSTRUCTIONS

Combine shrimp, celery, and apples.  Mix together lemon juice, salad oil,
and salt, and add to shrimp mixture. Chill. Just before serving, add eggs
and mayonnaise or salad dressing. Serve in lettuce cups. Yield: 6 servings.
