Skillet Chicken with Spinach

INGREDIENTS

1 Chicken
3 Shallots
1/4 c Vegetable oil
1 lg Bunc spinach
Salt & black pepper

INSTRUCTIONS

Heat oil on medium-high heat in large deep skillet. Add chicken pieces,
skin side down. Cook until golden, about 6-8 minutes on each side. Turn
heat to medium-low. Sprinkle shallots over chicken. Season with salt &
pepper. Continue cooking another 10 minutes. To serve: place some spinach
leaves on each. Place & set chicken pieces on top. The heat from the
chicken will steam the spinach. Add more salt & pepper if desired & enjoy!
Approximately 12-15 minutes.
