Sloppy Joe Pot Roast

INGREDIENTS

4 lb Beef round tip roast
2 tb Cooking fat
Salt
Pepper
8 oz Tomato sauce
1 1/2 c Water
1 Sloppy Joe seasoning mix
2 md Potato; pared and quartered
1 c Carrot; sliced 1/2" thick
1 c Zucchini; sliced 1/2" thick

INSTRUCTIONS

1.  In a Dutch oven, or large pan with a tight-fitting cover, brown meat in
fat.  Season with salt and pepper and remove from pan. Pour off fat
drippings. 2. Add tomato sauce, water, and seasoning mix. 3. Return meat to
pan.  Cover and simmer for 3 to 3 1/2 hours, or until done. (Or cook in a
325F oven for same amount of time.) 4. Turn meat once to cook it evenly
throughout. Add potatoes and carrots during the last 35 minutes of cooking,
zucchini the last 15 minutes. 5. Remove meat and keep warm. Skim off any
excess fat.  Taste sauce and correct seasoning, if necessary, with salt and
pepper. 6. Serve sliced meat with vegetables and sauce.
