Smoked Chicken Breast

INGREDIENTS

1 tb Brown sugar
1 ts Salt
2 10-oz boneless chicken breasts
Strong Tea Smoking Mixture (see recipe)

INSTRUCTIONS

Here is a technique described in the latest 'Food & Wine". (3/97)
Combine salt and sugar in a bowl. Rub into the chicken. Cover a refrigerate
overnight. Smoke for 30 minutes. Let rest 5 minutes before slicing. Serve
warm or cold.
