Smoked Fish Kedgeree

INGREDIENTS

2 c Smoked fish
3 tb Butter or margarine
3 tb Flour
1 ts Salt
Few grains cayenne pepper
1 1/2 c Milk
2 c Cooked rice
2 Hard cooked eggs; sliced
1/4 Dried green pepper
1 tb Butter or margarine
1 Tomato; chopped

INSTRUCTIONS

Recipe By : Ted Dahlen "Smoke Seafood"
Flake fish. Make a white sauce using 3 Tbsp butter, 3 Tbsp flour,, salt,
pepper and milk. Place rice, fish, eggs, green pepper and tomato in layers
in a 1-1/2 quart casserole. Begin and end with a layer of rice and pour
white sauce over all. Dot with 1 Tbsp butter. Bake in a moderate oven (350
degrees F.) for 20 to 30 minutes or until piping hot.
