INGREDIENTS

3 c Cold heavy cream
3 T Rosewater, or more
3 Egg whites, beaten stiff
Garnish: 1 large apple
Sprigs of evergreen
Will serve six, but you
May double or triple the

4 Apples, cored peel

Cinnamon
1 T Butter, cut into pieces
1/4 c Raisins
Water
1 c Heavy cream
1 T Rose water
1 T Confectioners' sugar
Garnish: sprigs of
Evergreen

INSTRUCTIONS

To make a Dyschefull of Snowe--Take a pottell of swete thycke creame
and the whytes of eyghte egges, and beate them altogether wyth a
spone. Then putte them in youre creame and a saucerfull of Rosewater,
and a dyshe full of Suger wyth all.  Then take a stycke and make it
cleane, and than cutte it in the ende foure square, and therwith  beate
all the aforesayde thynges together, and ever as it ryseth take  it of
and put it into a Collaunder. This done, take one apple and set  it in
the myddes of it, and a thicke bushe of Rosemary, and set it in  the
myddes of the platter. Then cast your Snowe uppon the Rosemarye  and
fyll your platter therwith. And yf you have wafers caste some in  wyth
all and thus serve them forthe.--A Proper Newe Booke of Cokerye  This
recipe for a "banqueting conceit" is ideal for a dramatic  holiday
drink or dessert....  As a drink: 1. In a bowl, beat the heavy cream
for 1 minute or until  it froths. 2. Add rose water and confectioners'
sugar. Beat another 30  seconds. 3. Lightly fold in egg whites,
reserving a few tablespoons  for garnish. 4. Place apple in the center
of a punch bowl. (For a  colder drink, you may set the punch bowl into
a larger bowl of  crushed ice.) 5. Pierce apple with sprigs of
evergreen. 6. Pour  "snow" over apple. Dot evergreen sprigs with bits
of reserved egg  white. 7. Serve immediately.  As a dessert: 1.
Sprinkle the cavity of each apple with cinnamon; then  stuff with a bit
of butter and 1 tablespoon raisins. 2. Place stuffed  apples in an
ovenproof baking dish which contains 3/4 inch water.  ===============
