INGREDIENTS

2 c Lukewarm water
2 ts Salt
2 1/4 c Chickpea flour
1/4 c Extra-virgin olive oil; plus
2 tb Extra-virgin olive oil
Onion And Vegetable Marmalade; see * Note
Fresh dried goat cheese

INSTRUCTIONS

* Note: see the "Onion And Vegetable Marmalade" recipe which is included in
this collection.
Preheat oven to 425 degrees and preheat broiler. Place water and salt in a
large wooden bowl. Whisking constantly, add checkpea flour until all is
well blended. Stir in olive oil and let stand
30    minutes. Smear a 14-inch cast-iron skillet with 2 tablespoons
oil and pour in batter. Place under broiler for 2 to 4 minutes, until
lightly blistering. Remove and place in oven and bake 2 to 4 minutes until
firm. Remove, cut into wedges. Serve with Onion And Vegetable Marmalade and
fresh dried goat cheese. This recipe yields 4 servings.
