Soft Polenta With Olives And Feta

INGREDIENTS

1/4 c Greek olives, chopped
1 t Olive oil
1/4 c Feta cheese, grated
2 T Parmesan cheese grated
1 c Garlic, mashed
1 T Lemon juice, fresh
1 Just made recipe for soft
polenta
Omitting the gorganzola
cheese

INSTRUCTIONS

Stir the olives, oil, feta, Parmesan, garlic and lemon into the hot
polenta. Serve warm in shallow bowls, accompanied by a salad of
interesting greens. Sauteed dark leafies like kale and chard are also
a tasty side dish for the polenta. Per serving: 66 Calories; 6g Fat
(78% calories from fat); 2g Protein; 2g Carbohydrate; 8mg  Cholesterol;
