INGREDIENTS

1/2 c Yellow cornmeal
Salt & ground red pepper to taste
Black pepper to taste
1 lb Frozen catfish fillets; partially thawed
And cut into 2 x 3 inch pieces
Vegetable oil
1/2 c Mayonnaise
3 tb Sweet relish

INSTRUCTIONS

In pie plate, mix together cornmeal, salt, red and black pepper. Dredge
fish pieces in cornmeal mixture, patting to coat on all sides. In large
heavy skillet heat vegetable oil to 375 degrees. Fry fillets until golden
brown. Drain on paper towels. In a small bowl, mix mayonnaise and sweet
relish. Serve catfish warm with mayonnaise and relish mix.
Approximately 8 minutes.
Per serving (excluding unknown items): 1041 Calories; 95g Fat (78% calories
from fat); 7g Protein; 54g Carbohydrate; 38mg Cholesterol; 627mg Sodium
