INGREDIENTS

1/2 c Southwestern Seasoning
1 Egg white
4 Skinned chicken breast halves, (6-ounce)
Vegetable cooking spray
2/3 c Yellow cornmeal
1/3 c Italian-seasoned breadcrumbs
1/4 c Grated Parmesan cheese
4 ts Chili powder
4 ts Ground cumin
4 ts Garlic powder
1 ts Sugar
1/2 ts Ground red pepper

INSTRUCTIONS

SOUTHWESTERN SEASONING
Place 1/2 cup Southwestern Seasoning in a large zip-top heavy-duty plastic
bag.
Lightly beat egg white in a shallow dish; dip chicken into egg white,
turning to coat. Add chicken to bag; seal bag, and shake to coat. Place
chicken on a 15 x 10 x 1-inch jelly-roll pan coated with cooking spray.
Lightly coat chicken with cooking spray.
Bake at 400 degrees for 45 minutes or until done. Yield: 4 servings.
SOUTHWESTERN SEASONING: Combine all ingredients in large zip-top heavy-duty
plastic bag; seal bag, and shake well. Store tightly sealed in
refrigerator, and shake well before each use. Yield: 1-1/2 cups (serving
size: 2 tablespoons).
Per serving: 354 Calories; 6g Fat (14% calories from fat); 36g Protein; 43g
Carbohydrate; 69mg Cholesterol; 1765mg Sodium
