Soy-sugar Marinade For Bbq Spareribs

Chinese Sauce 4 Servings

INGREDIENTS

1 Clove garlic
2 Fresh ginger root
1/4 c Soy sauce
1 T Sugar
1 t Salt
1 ds Pepper

INSTRUCTIONS

Mince garlic and ginger root; then combine with remaining  ingredients.
Rub mixture over spareribs. Let stand 1 hour; then roast.    VARIATIONS
For the regular soy sauce, substitute 5 tablespoons light soy sauce
and 1-1/2    teaspoons heavy soy sauce. Omit the ginger root.
Substitute a second garlic clove. Add 2 tablespoons sherry and 1/2
teaspoon each of ground cinnamon, anise and cloves. Omit the pepper.
Add 2 teaspoons brown bean sauce, mashed; and 1/2 teaspoon ground
