Spicy Black Beans

INGREDIENTS

2 cn (15 oz.) black beans (or equivament dried black beans)
1 sm Onion; chopped
1 sm Green bell pepper; chopped
1 Chopped jalapeño peppers;, (more or less to taste), up to 2
1 tb Corn; vegetable or canola oil
3/4 ts Cumin
1/2 ts Chili powder
Salt & pepper to taste

INSTRUCTIONS

These beans make an AWAKENING side dish, or serve them over rice for a
vegetarian main course. Very quick and easy to prepare!!
Using Canned Beans
Sauté onion and bell pepper and jalapeños together in oil for 2-3 minutes
or until softened. Add beans and spices. Simmer for about twenty minutes,
stirring frequently.
Using Dried Beans
If you're starting with dried black beans, soak them according to package
instructions. Drain and rinse. Sauté onion and bell pepper and jalapeños
together in oil for 2-3 minutes or until softened. Add beans, spices and
the appropriate amount of water (see package instructions for cooking
beans). Simmer for several hours (refer to package instructions for cooking
beans) until tender.
