Spicy Cucumber Salsa

INGREDIENTS

2 Whole cucumbers — seedless
2 md Shallots — peeled and
Minced
1 1/2 tb Jalapeno pepper — minced
1 1/2 c Fresh mint — loosely
Packed
Chopped medium
2 tb Champagne wine vinegar
1 ts Salt
1/4 ts Freshly ground black pepper
3 ts Olive oil

INSTRUCTIONS

Peel cucumbers in strips for a striped effect. Cut in half lengthwise;
remove any seeds. Cut crosswise into 1/8-inch slices.  Combine cucumbers,
shallots, jalapeno and mint. In a small bowl, combine vinegar, salt and
pepper. Gradually whisk in olive oil until combined. Pou over cucumbers and
toss gently to combine.
