INGREDIENTS

5 oz Canned chickpeas; drained and rinsed (reserve 1 tsp. liquid)
1 ts Sesame tahini
1 Garlic cloves; minced
1 ts Lemon juice
1/4 ts Olive oil
1/4 ts Cumin
1/4 ts Coriander
1/8 ts Cayenne pepper
White pepper
3/4 ts Parsley; minced

INSTRUCTIONS

Combine all ingredients in a blender or food processor. Use 1 tsp. bean
juice to moisten, if necessary. Process until smooth.
Per serving: calories 70, fat 1.9g, 24% calories from fat, cholesterol 0mg,
protein 3.5g, carbohydrates 10.4g, fiber 2.6g, sodium 3mg.
Exchanges: 1/2 Starch.
