Spicy Oven-Fried Catfish

INGREDIENTS

1/4 c Yellow cornmeal
1/4 c Dry bread crumbs
1/2 ts Salt
1/2 ts Paprika
1/4 ts Garlic powder
1/8 ts Cayenne pepper
1/8 ts Ground thyme
4 Dressed, farm-raised catfish (about 7 ounces each)
1/2 c Skim milk
Nonstick cooking spray
1/4 c Margarine, melted

INSTRUCTIONS

Move oven rack to position slightly above middle of oven. Heat oven to 450
degrees. Combine cornmeal, bread crumbs, salt, paprika, garlic powder,
cayenne pepper and thyme. Dip fish into milk; coat with cornmeal mixture.
Place in 13-by-9-by-2-inch rectangular pan coated with cooking spray. Pour
margarine over fish. Bake uncovered until fish flakes very easily with
fork, 15 to 20 minutes.
