Spicy Peanut Sauce

INGREDIENTS

10 lg Garlic cloves; peeled
2/3 bn Fresh coriander; leaves and upper stems
1/2 c Unseasoned peanut butter; see * Note
1/2 c Thin soy sauce; plus
1 tb Thin soy sauce
1/4 c Sesame oil
5 tb Sugar
1 ds Chinese rice wine vinegar
1 tb Hot chili oil

INSTRUCTIONS

* Note: See the "Chinese Style Peanut Butter" recipe which is included in
this collection.
In a food processor, combine the first eight ingredients together. Process
until smooth. Place in a saucepan and bring up to a simmer. Remove from the
heat and set aside until ready to use.
