Spicy Pesto Soba

INGREDIENTS

1/2 lb Snow peas
3/4 lb Soba noodles
1 lb Boneless skinless chicken breasts; cooked
3/4 c Scallion greens; minced
1 Hot red chile pepper OR
1 ts Crushed red pepper
6 Cloves garlic
1 c Fresh basil leaves
1/2 c Fresh mint leaves
1 tb Toasted sesame oil
1/2 c Soy sauce
1 tb Soy sauce
6 tb Japanese rice vinegar
3 tb Sugar
2 tb Mirin OR sake
1 tb Sugar

INSTRUCTIONS

SPICY PESTO
RICE WINE DRESSING
Blend Spicy Pesto ingredients to a paste in a food processor or a blender.
Whisk together the Rice Wine Dressing ingredients.
Snap ends of snow peas, remove strings, and slice lengthwise in half. Bring
a large pot of water to a boil. Add the snow peas and blanch for 10
seconds. Drain, refresh in cold water and drain again. Blot dry with paper
towels.
Cook the soba noodles until just tender, rinse under cold water, and drain.
Cut chicken breasts into thin strips.
In a bowl, toss together the noodles and the Spicy Pesto. Arrange the
noodles on a platter and arrange the snow peas, chicken, and scallions in
concentric circles on top, with the Dressing on the side or sprinkle the
Dressing on top and toss lightly.
Makes 6 servings.
