Spicy Pork Stir Fry

INGREDIENTS

600 g Pork Strips
3 tb Peanut oil
8 Spring onions; sliced
2 1/2 ts Grated ginger
1 Clove garlic; crushed
3 Red chillies; (seeded), finely
; chopped
5 1/2 tb Lemongrass; finely chopped
1 tb Grated lime rind
3 tb Lime juice
2 tb Hoisin sauce
1 1/2 tb Salt reduced soy sauce
1/3 c Chicken stock
200 g Sliced baby beans

INSTRUCTIONS

Heat 1 tablespoon oil in wok, add half the pork, quickly toss to brown and
sear (1 -2 minutes). Remove to side dish. Repeat with another tablespoon
oil and remaining pork, remove. Heat remaining oil, reduce heat. Add spring
onions, ginger, garlic, chillies and lemongrass, stir and cook 1 minute.
Add rind, juice, hoisin sauce, soy sauce, stock and beans, cook 1-2
minutes. Return pork to wok, stir to combine. Serve with boiled noodles or
rice.
