Spicy Prawns With Tomato

INGREDIENTS

2 T Vegetable oil
400 g Frozen large prawns
defrosted & drained
1 t Sea salt
1/2 t Black peppercorns, crushed
1/2 t Sugar
2 t Grated root ginger
2 Cloves garlic, finely
chopped
2 T Finely chopped spring onions
1 Birds, 1-2 eye chillies
deseeded fine choppd
213 g Can chopped tomatoes
1 T Cornflour

INSTRUCTIONS

Heat half the oil in a wok. Stir fry the prawns for 1 minute. Remove
from the pan. Add the remaining oil, the salt, pepper and sugar and
stir for 15 seconds. Add the ginger, garlic, spring onions and
chillies and stir fry for a further 15 secs. Add the tomatoes, then
fill the can with water and add to the pan, stirring the cornflour
into the last 2 tbsp until smooth. Stir into the pan for 5 minutes.
Stir in the prawns and simmer for 2-3 minutes. Serve with Basmati
rice.  NOTES : Speedy stir-fry. Serves 3-4 Preparation: 20 minutes
