Spicy Sesame Noodles From Pamela Sue Martin

INGREDIENTS

1 lb Noodles, Asian or regular kind
1/3 c Peanut butter
1/2 c Water
3/4 lb Firm tofu, (mashed or cubed)
1/4 c Dry sherry, or mirin
6 tb Soy sauce
4 tb Sesame oil
1 tb Honey, or sugar
3 tb Sesame seeds
1/2 ts Cayenne
1 Cucumber, sliced
4 Green onions, sliced

INSTRUCTIONS

Cook noodles according to directions. Stir peanut butter and water over low
heat. Add next 7 ingredients and stir. Drain noodles and toss with sauce.
Sprinkle green onions and cucumber over the top and serve.
