INGREDIENTS

1/4 c Bulgar wheat (soak about 1/2 hour;dry)
1/4 Red onion; sliced
1/4 Bell pepper; sliced
1 Celery stalk; diced
1/2 Cucumber; chopped
1 bn Fresh cilantro; chopped
1/4 bn Fresh parsley or about 1 Tbs.dry
1/4 c Corn kernals
1/4 c Whole red;pinto or black beans
1 Spicy (16-oz) picante sause
Salt; pepper and garlic powder
1 Fresh tomato; chopped (add just before serving)

Prepare wheat. Chop, slice, dice or slice all or chop all veggies then mix
together.  Add picante sauce and spices.  Add tomatoes.  Serve with toasted
warm pita or bagels. Keeps well overnight, but best if tomatoes are added
just before serving. I also like to add a little extra fresh cilanto with
the tomatoes. ENJOY!
