INGREDIENTS

2 T Olive oil, extra virgin OR
2 T Vegetable stock
1 1/2 c Bell peppers, mixed green
and red diced
3/4 c Onions, yellow cubed
1 1/4 c Salsa, tomato mild
1/2 c Olives, black pitted
1 1/2 c Garbanzo beans, canned
drained
1 c Tofu, baked cubed
1/8 t Salt
1/8 t Pepper

INSTRUCTIONS

Combine the oil, peppers, and onion in a saucepan and cook over high
heat for 5 to 8 minuts. Reduce the heat and add the remaining
ingredients. Cook over medium heat for 10 minutes. Serve with Fresh
