Spicy Udon Salad

INGREDIENTS

1 c EDEN Arame or Hiziki
1 c Water
2 md Carrots cut into matchsticks
1 pk EDEN Udon or EDEN SOba
4 Green onions, thinly sliced
1 tb EDEN Hot Pepper Sesame Oil
1 tb EDEN Toasted Sesame Oil
1/4 c EDEN Ume Vinegar
1/4 c Tahini
3 Cloves garlic; minced
1/8 c Water or stock

INSTRUCTIONS

DRESSING
Soak Arame or Hiziki in water for 10 minutes. Simmer for 10-15
minutes. Drain. Lightly steam carrots. Rinse with cold water. Cook pasta
as package directs. Mix pasta, Arame, carrots, and green onions. Prepare
dressing. Add to salad. Mix well. Chill before serving.
Prep Time: 1O minutes
Cooking Time: 15 minutes
Servings: 5-6
