Spinach-artichoke Quiche

INGREDIENTS

6 Eggs
3 c Milk
Nutmeg
White pepper and, salt to
taste
1 Artichoke hearts, chopped in
small pieces 14 ounce
1 c Spinach, finely chopped
1 c Parmesan cheese, freshly
grated
2 Pre-baked 8" pie shells

INSTRUCTIONS

To make the custard, mix the ingredients together. Place spinach,
artichoke hearts and cheese into pie shells. Add the custard mixture.
Place in a 375 degree oven and bake 45 minutes to one hour until the
custard is set and a toothpick inserted comes out clean. If using
processed Parmesan cheese, use less salt in the custard mix. If using
frozen spinach, squeeze out water after defrosting.  Recipe by: Lisa
