Spinach Cheese Rolls

INGREDIENTS

1 Sheet frozen puff pastry
1 tb Olive oil
3/4 c Sliced green onions
1 pk Frozen chopped spinach; (10oz)
1 c Crumbled feta cheese
1 tb Fresh lemon juice
1/4 ts Nutmeg
1 Egg yolk
Milk

INSTRUCTIONS

Thaw pastry. Roll out on floured surface to 13" square. Cut in half
lengthwise, creating two 13x6 1/2-inch strips. Heat oil in medium skillet.
Add green onions and saute 1 minute. Transfer to large bowl. Thaw spinach
and stir in cheese, lemon juice and nutmeg. Season with salt and pepper.
Add egg yolk and mix well. Divide equally between pastry strips and spread
filling leaving 1" border on all sides. Brush edges of pastry with milk.
Starting at long side, roll up jelly roll fashion. Press edges to seal.
Place on buttered baking sheet. Cut 1" long score lines in tops of
pastries, spacing 3/4" apart. Brush pastries with milk. Bake at 400 degrees
until golden, about 25 minutes. Cool slightly and cut into slices at score
lines. Yield: 36 slices.
