Spinach Latkes

Eggs 1 Servings

INGREDIENTS

3/4 lb Fresh spinach, -or-
1 pk (10 ounce) frozen spinach
3 Eggs beaten
6 tb Matzo meal or bread crumbs
Salt and pepper to taste
3 tb Grated onions
Oil, for frying

INSTRUCTIONS

Wash and check spinach carefully.  Steam in a tiny amount of lightly salted
water for 5 minutes.  Drain well.  Chop.  Mix with remaining ingredients
and let rest for 10 minutes.  Form patties.  Drop by tablespoonful into hot
oil and fry on both sides unt il golden brown.
Variation:
Leek pancakes -- Wash and thinly slice 1/2 pound of leeks.  Proceed as
above.
