1 1/2 tb Flour
1 c Milk; skim
1/4 c Chicken broth
3/4 ts Salt; divided

2 c Ricotta cheese (part-skim)
10 oz Spinach; frgn, chpd, drained
2 oz Parmesan Cheese; grated
1/2 ts Garlic pwdr
8 Manicotti shells*
2 oz Mozzarella cheese; shredded
1 1/2 tb Margarine
1 1/2 tb Flour
1 c Milk; skim
1/4 c Chicken broth
3/4 ts Salt; divided
1/4 ts Pepper
1/4 ts Nutmeg
2 c Ricotta cheese (part-skim)
10 oz Spinach; frgn, chpd, drained
2 oz Parmesan Cheese; grated
1/2 ts Garlic pwdr
8 Manicotti shells*
2 oz Mozzarella cheese; shredded

INSTRUCTIONS

Cook manicotti shells according to directions and drain. In small saucepan
heat margarine over medium heat until bubbly and hot; add flour and cook,
stirring constantly for 1 minute. Reduce heat to low; gradually stir in
milk and broth. Continue to stir and cook until mixture is smooth; add 1/4
t. salt and dash each of pepper and nutmeg and let simmer, stirring
occasionally, until mixture is thickened, 10-15 minutes. While mixture is

mixture into each manicotti shell and arrange stuffed shells in dish; top
with remaining sauce and sprinkle with mozzarella. Cover dish and bake
until manicotti are heated through, 20-25 minutes. Turn oven control to
broil, uncover pan, and broil until cheese is melted and lightly browned,
3-5 minutes. 2 Manicotti=464 calories.
