Spinach Quiche Pie

INGREDIENTS

1 1/2 c Grated cheddar cheese
3/4 c Flour
1/2 t Salt
1/4 t Dried mustard
1/2 c Melted butter or margarine
let cool
1 10 oz. frozen chopped
spinach cooked and
drained
1/2 c Milk
1/2 c Half and half
1/4 c Chopped onion
1 t Salt
1/2 t Nutmeg
1 ds Pepper

INSTRUCTIONS

Prepare Crust: Mix the crust ingredients together. Knead and press
into a pie pan. Set aside Prepare filling: Preheat oven to 400
degrees. Mix the filling ingredients in a saucepan. Heat while
stirring constantly. Do not boil. Add three eggs slightly beaten that
are room temperature. Stir. Add the spinach and stir gently. Pour  this
mixture into your pan. Bake pie for 15 minutes; reduce oven
temperature to 325F., and bake an additional 25 minutes. Cleo21497
