Spinach Salad With Citrus Dressing

INGREDIENTS

2 10-ounce washed and
trimmed fresh spinach
3/4 c Thinly sliced purple onion
separated into rings
2/3 c Unsweetened orange juice
1 1/2 T Chopped fresh cilantro
1/4 t Salt
1/4 t Pepper
1 T Extra-virgin olive oil
1 Clove garlic, minced

INSTRUCTIONS

Directions: Combine spinach and onion rings in a large bowl. Combine
orange juice and next 5 ingredients in a jar; cover tightly, and  shake
vigorously. Pour over salad, and toss gently.  Nutritional Info:
