Split Pea Soup

INGREDIENTS

2 c Split Peas, dry
2 qt Water
1 Onion, finely diced
2 Carrots, finely diced
1 ts Parsley, flakes
2 Stalks Celery, finely diced
1/4 ts Pepper
1 Bay Leaf
1/4 ts Salt, or substitute
1/8 ts Garlic Powder

INSTRUCTIONS

Sort and wash peas. Place peas and water in a lg saucepan; cover and bring
to boil for 2 min.
Remove from heat and let stand 1 hr.
Add remaining ingredients and simmer for 1 hr.
Discard bay leaf.
If desired, put soup through sieve or blend until smooth.
Return to saucepan and heat before serving.
PREP TIME: 15 min SOAKING TIME: 1 hr. COOKING TIME: 1 hr.
SERVINGS: 5 - 6
This is quite good.
