Steak and Guinness Pie (Irish)

INGREDIENTS

2 1/4 lb Round steak
1 tb Flour
1 ts Brown sugar
1 tb Raisins
5 Onions
10 fl Guinness
8 sl Bacon
3 oz Lard
Parsley, chopped
1 Double-crust pie

INSTRUCTIONS

Cut steak into bite-size cubes, roll in seasoned flour. Brown in the lard
with bacon, chopped small. Place meat in casserole, peel and chop onions.
Fry onions til golden. Add to meat. Add raisins, brown sugar, Guinness.
Cover tightly. Simmer over low heat or in 325 - 350F oven for 2 1/2 hrs.
Stir occasionally. Add water if the gravy gets too thick. Line deep pie
dish with half the crust. Bake it blind. Add Guinness/beef mixture. Add top
pie crust. Bake until finished, probably about 10 minutes. For a variation,
substitute 3 tbs. honey for the brown sugar. Source: Diane Duane, Co.
