Steak With Madeira Basil And Olives

INGREDIENTS

1 T Olive oil
4 Sirloin or fillet steaks
125g 4oz – 175g
6oz seasoned
with salt and
freshly ground
black pepper
3 T Madeira or brandy
1 200 millilit half fat creme
fraiche
1 T Black olives, pitted and
finely
chopped
1 15 grams pac basil, roughly
chopped

INSTRUCTIONS

Heat the oil in a large frying pan over a moderate heat.  Place the
seasoned steaks into the hot pan, cook the steaks for 2 1/2  minutes on
each side - rare; 4 minutes each side - medium; 6 minutes  each side -
well done.  Remove the steaks from the pan, cover with foil and keep
warm.  Add the Madeira to the pan and cook for 1 minute. Stir in the
creme  fraiche, olives and basil.  Pour the sauce over the steaks.
Notes  Serve the steaks with lyonnaise potatoes and crisp green
