INGREDIENTS

2 lb Beef shin
1/2 lb Bacon
2 qt Boiling water
2 lb Potatoes, pared
1 lb Carrots, scraped
1 lb Turnips, pared
1 Cabbage, quartered
1 Smoked sausage, sliced
2 c Rice

INSTRUCTIONS

and bacon to water. Cover. Simmer for 2 Hours. Add  vegetables. Simmer
for 15 minutes. Add sausage. Simmer until  vegetbales are tender.
remove 4 1/2 cups broth from stew. Bring to  boil. add Rice. Cover.
Simmer for 30 minutes. Drain stew; Pour broth  into soup bowls. Place
meat on Platter. Surround with vegetables.  Serve with rice.  6
servings.  Suggested menu: Portuguese stew, escarole salad, garlic
bread, peach cobbler, coffee or tea.  Lei, Bronx, NY USA  Recipe
