Stir-fried Beef With Mandarin Orange Sauce

INGREDIENTS

1 lb Fillet of beef, sliced
thinly into
strips
2 T Olive oil
4 Cloves garlic, finely
chopped
Salt and freshly ground
pepper
Juice from one 11-ounce can
of mandarin or
oranges
Juice from 4 fresh mandarin
oranges
2 T Low sodium soy sauce
1 t Fresh ginger, finely chopped
3 Green onions, sliced finely
on
the diagonal

INSTRUCTIONS

How to Prepare Stir Fried Beef:  Heat the oil in a wok until smoking.
Add the beef and garlic and stir  fry for 2-3 minutes for medium rare
or until cooked to your liking.  Remove the beef/garlic to a bowl.  How
to Prepare Mandarin Orange Sauce:  Add the mandarin juice and soy sauce
and ginger to the wok and reduce  by half. Add the green onions and
cook for 1 minute.  To Assemble:  Add the beef/garlic back to the wok
and heat through. Season with  salt and pepper to taste.  © 1997
