Stir Fried Broccoli And Carrots

INGREDIENTS

2 t Ginger
1 Clove garlic, chopped
Fine
1 1/2 c Broccoli flowerets, small
2 Carrots, sliced thin
1 Onion, sliced
3/4 c Chicken broth
1/4 t Salt
1 T Cornstarch
1 T Water, cold
1 c Mushrooms, sliced

INSTRUCTIONS

Prepare a 12" skillet with cooking spray; heat until hot.  Add ginger
and garlic; stir fry about 1 minute or until light brown.  Add
broccoli, carrots, and onion; stir fry 1 minute.  Stir in broth and
salt; stir into vegetable mixture.  Cook and stir 10 seconds or until
thickened. Add water and mushrooms; cook and stir 30 seconds.  Recipe
