Stir-Fried Broccoli (Or Other Veggies)

INGREDIENTS

3/4 lb Broccoli
1 1/4 c Mushrooms; sliced
1 lg Carrot; in 2" strips
1 Clove garlic; minced
1 ts Lemon rind; grated
1/2 ts Salt
1/4 ts Thyme

INSTRUCTIONS

Cut broccoli into flowerets, peel and slice stems.  Stir-fry everything 5-8
minutes, ot till crisp-tender.
  VARIATIONS:
Zucchini- Substitute 3/4 pound sliced zucchini and 1 cup sliced celery
instead of broccoli and mushrooms.
Green Beans- Substitute 3/4 pound green beans, cut in 2" pieces and 1 cup
sliced onion for the broccoli and mushrooms.
