1 T Olive oil
1 Zucchini, julilenned
1 Eggplant, julienned
1 Red onion, julienned
1/2 t Cumin
Black pepper
1 c Non-fat mozzarella
Shredded

INSTRUCTIONS

Stir-fry veggies in oil until tender-crisp. Add cumin and pepper.
