Strawberry Parfait (low Fat)

INGREDIENTS

2 c Nonfat milk
1/4 c Nonfat powdered milk
1/3 c Granulated sugar
3 T Cornstarch
1/2 t Vanilla
2 c Strawberries
2 T Confectioners sugar
24 Strawberries, hulled and
sliced about 3 cups

INSTRUCTIONS

From: Perry Greene <palgreen@hiwaay.net>  Bring milk, powdered milk,
sugar and cornstarch to boiling in  saucepan over low heat, stirring
constantly, until thickened, 15 to  20 minutes; then boil 30 seconds.
Remove from heat. Add vanilla.  Strain into bowl. Place plastic wrap
directly on surface of custard.  Refrigerate until chilled and firm,
about 30 minutes. Prepare coulis:  Puree strawberries and sugar in
blender or food processor. In parfait  glasses or custard cups,
alternate layers of pudding, coulis and  sliced berries. Chill.  Per
serving: 125 calories, 1 gm fat  Posted to recipelu-digest by
