Sun Fruit Salad With Banana Dressing

INGREDIENTS

2 Bananas, peel slice
8 oz Lemon low-fat yogurt
2 T Sugar
2 t Lemon juice
Lettuce leaves
8 c Cut-up fruit such as:
papaya banana
strawberries star fruit
cantaloupe honeydew
mango
kiwi fruit and/or
blueberries

INSTRUCTIONS

For Dressing: In a blender or food processor, combine sliced bananas,
lemon yogurt, sugar and lemon juice; cover and blend for 15 to 20
seconds or until smooth. Chill dressing, covered, for up to two hours.
To serve, line salad plates with lettuce; arrange fruit on top. Top
with dressing. Sprinkle with walnuts. From Better Home & Gardens
