INGREDIENTS

1/2 c Minute tapioca
1 1/2 c Brown sugar
3 c Hot water
1/2 Box dates
1/2 c Chopped nuts
Cream for whipping

INSTRUCTIONS

This is simply an eggless tapioca pudding, dressed up with dates, nuts, and
whipped cream in the manner of an ice cream sundae. Ice cream sundaes were
a moderately new creation at this time, having been devised and named
around 1890; their invention is variously claimed for Philadelphia, Menosha
(Wisconsin), St Louis, and various other Eastern and Midwestern cities.
Mix together the tapioca, brown sugar. and water. Cook in the top of a
double boiler over hot water for 1/2 hour. Add the dates and cook another
1/2 hour. Add the nuts and cool. Top with whipped cream.
