Super Stuffed Potatoes

INGREDIENTS

4 lg Baking potatoes
16 oz Low-fat cottage cheese; 1%
1 c Diced ham; optional
1 c Low-fat Cheddar cheese; shredded
1/2 c Chopped green onions; optional
1/2 ts Salt
1/8 ts Freshly ground pepper

INSTRUCTIONS

1. Prick potatoes all over with fork. Arrange in microwaveproof dish and
microwave on High 15 to 18 minutes, turning halfway through, until tender.
2. Heat oven to 400°F. Halve potatoes and scoop out insides, leaving
1/4-inch shell. Mash cooked potato with cottage cheese in bowl. Stir in
ham, Cheddar, onions, salt and pepper. Spoon mixture into shells. Bake 20
minutes. Makes 4 servings.
NOTES : For a meatless meal, omit the ham and add your favorite vegetable
instead. Prep time: 25 minutes; Baking time: 20 minutes; Degree of
difficulty: Easy; Microwave; Low-fat
