INGREDIENTS

3/4 lb Boneless skinless chicken
breast cooked and cut
into
2 inch cubes
1 c Celery, diagonally sliced
2/3 c Snow peas, trimmed
1/3 c Red bell pepper, seeded and
diced
2/3 c Apples, preferably Gala
unpeeled and diced
2 T Vinegar, plus 2 teaspoons
2 T Canola oil, plus 2 teaspoons
1 T Sugar, plus 1 teaspoon
3/4 t Paprika
3/4 t Celery seed
Salt and pepper, to taste

INSTRUCTIONS

Combine all salad ingredients. Whisk together the dressing
ingredients. Pour the dressing over the salad and serve.  Per serving:
calories 238, fat 11.7g, 44% calories from fat,  cholesterol 54mg,
protein 20.9g, carbohydrates 12.7g, fiber 2.0g,  sodium 75mg.
