Sweet and Sour Chicken Salad

INGREDIENTS

3/4 lb Boneless skinless chicken breast; cooked and cut into 2 inch cubes
1 c Celery; diagonally sliced
2/3 c Snow peas; trimmed
1/3 c Red bell pepper; seeded and diced
2/3 c Apples; preferably Gala, unpeeled and diced
2 tb Vinegar; plus 2 teaspoons
2 tb Canola oil; plus 2 teaspoons
1 tb Sugar; plus 1 teaspoon
3/4 ts Paprika
3/4 ts Celery seed
Salt and pepper; to taste

INSTRUCTIONS

Combine all salad ingredients. Whisk together the dressing ingredients.
Pour the dressing over the salad and serve.
Per serving: calories 238, fat 11.7g, 44% calories from fat, cholesterol
54mg, protein 20.9g, carbohydrates 12.7g, fiber 2.0g, sodium 75mg.
