Sweet Habanero Smoked Pork Loin Stack

INGREDIENTS

8 1/2 Inch Medallion of Smoked Pork loin
8 sl Tomato
8 sl Red onion
1/2 Head Green or savory cabbage; shredded
12 Sweet habanero peppers; julienned
1/2 c Country style Dijon mustard
1/4 c Oil and vinegar salad dressing
1 ts Salt
1 ts Blackpepper
1/2 c Sorghum Molasses
1/2 c Balsamic vinegar
1 tb Chili powder

INSTRUCTIONS

SLAW
SAUCE
Cut thick (1/2") slices of tomato and red onion and grill, basting them
with oil and vinegar as needed, grill only until slightly charred and
barely tender.
Combine slaw ingredients and chill. (save habanero trimmings and seeds for
sauce)
Combine sauce ingredients and cook to reduce to 1/2 cup total sauce
To assemble: Place an individual portion of slaw in middle of each pile.
Place, in alternating layers, pork, tomato, pork, onion, pork. Drizzle
sweet habanero sauce reduction over stack. Garnish top of stack with thinly
julienned sweet habanero.
