Indeed our utter incapacity is often the prop He delights to use for His next act… We are facing one of the principles of Yahweh’s modus operandi. When His people are without strength, without resources, without hope, without human gimmicks – then He loves to stretch forth His hand from heaven. Once we see where God often begins we will understand how we may be encouraged.

Sweet Potato Casserole

INGREDIENTS

3 md Sweet potatoes; (about 1-1/2 lbs), pared and cut into chunks.
2 lg Baking apples; (about 1 lb.), cored and cut into wedges.
1 ts Ground cinnamon
1/2 c Firmly packed brown sugar
1 Bay leaf
1/2 c Orange juice
2 tb Margarine; melted.

INSTRUCTIONS

Preheat over to 400F. In an 8 or 9 inch square baking dish, coated with
vegetable cooking spray, place potatoes and apples.
Sprinkle first with cinnamon, then with sugar; toss lightly. Add bay leaf,
orange juice and margarine.
Cover dish with foil. Bake about 60 minutes or until potatoes and apples
are fork-tender. Remove bay leaf before serving.
NOTES: Per serving: Calories - 209; Protein - 2g; Fat - 3g; Sodium - 50 mg;
Carbohydrates - 45g; Cholesterol - 0 mg.
