Sweet Potato Flan From Malaga

INGREDIENTS

1 1/2 lb Golden sweet potatoes
3/4 c Sugar
1/4 c Pedro Jiminez; sweet sherry
1/2 c Milk
1/2 c Cream
4 Eggs
1 ts Cinnamon

INSTRUCTIONS

Preheat oven to 350 degrees. Butter a 9-inch flan or dish. Bake potatoes
until soft, about 1 1/4 hours. Allow potatoes to cool. Peel and place in a
food processor with sugar, sherry, milk, cream, eggs and cinnamon and blend
until smooth. Pour into prepared dish. Place in oven and bake at 350
degrees for 45 to 50 minutes, or until firm. Remove, chill and serve. This
recipe yields 4 servings.
