Sweet Potato Minestrone With Turkey Sausage

INGREDIENTS

1/2 lb Smoked turkey sausage, cut
in 1/4" slices
1 c Diced onion
1 c Diced carrot
3/4 c Thinly sliced celery
3 c Water
3 c Diced peeled sweet potato
1 t Dried oregano
1/2 t Coarsely ground pepper
1/4 t Salt
29 oz No-salt-added whole
tomatoes canned
undrained
and coarsely chopped
15 oz Great northern beans
canned rinsed and
drained
8 c Coarsely chopped spinach

INSTRUCTIONS

Combine first 4 ingredients in a Dutch oven over medium-high heat;
saute 7 minutes or until sausage is browned. Add water and next 6
ingredients (water through beans). Bring to a boil; cover, reduce
heat, and simmer 30 minutes or until vegetables are tender. Stir in
spinach; cook an additional 2 minutes.  Yield: 7 servings (serving
size: 1-1/2 cups).: PER SERVING -CALORIES  221; FAT 7.3g; PROTEIN
12.1g; CARBOHYDRATES 29.3g; FIBER 6.3g;  CHOLESTEROL 0mg; IRON 4.2mg;
SODIUM 525mg; CALCIUM 189mg. each  serving provides 16,973 IUs vitamin
