Sweet Potato Mini-latkes

INGREDIENTS

2 Sweet potatoes, l pound
peeled and shredded
2 Green onions, finely chopped
2 tablespoons
1/4 c All-purpose flour
1/2 t Salt
1/4 t Pepper
1 Egg, slightly beaten
1 c Sour cream
Sliced pecans, if desired

INSTRUCTIONS

Heat oven to 400F.  Grease cookie sheet.  Mix all ingredients except
sour cream and pecans.  Drop sweet potato mixture by teaspoonfuls onto
cookie sheet; flatten  slightly.  Bake 12 to 15 minutes, turning once,
until golden brown.  Top with sour cream. Garnish with pecans. About 30
appetizers. *  Shredded white potatoes, blotted dry with paper towels,
can be  substituted for the sweet potatoes. Typed in MMFormat by
