Sweet Potato Pie With Pineapple

INGREDIENTS

3 c Mashed potatoes
2 c Rich milk or light cream
3 T Unsalted butter
4 Separated eggs
3/4 c Brown sugar
1/2 c Light corn syrup
1 t Salt
1 t Ginger
1 t Cinnamon
1 t Allspice
1 c Drained crushed pineapple
1 Unbaked pie shell

INSTRUCTIONS

Heat oven to 350. Mix potatoes with milk. Add butter, yolks, sugar,
salt & spices & beat until light & fluffy. Blend in pineapple. Beat
whites until stiff & fold into potato mixture. Pour mixture into
shell. Sprinkle with cinnamon & bake 45 minutes. Serve warm.  File
